Fudge Truffles Recipe from Katie Richins
8 oz cream cheese, softened 3 cups powdered sugar, sifted 3 cups chocolate chips (semi-sweet or 60% cacoa) 2 T butter 1 1/2 t vanilla flavoring or extract to taste
Beat cream cheese well. Add sifted powdered sugar and beat well.
Melt chocolate chips and the butter together in the microwave in 30 second intervals (it usually takes me 1.5 minutes).
Mix melted chocolate mixture with the cream cheese mixture. Add the vanilla and mix well. Mix in additional flavoring (1 t almond extract, 1 t peppermint extract, 2 T raspberry jam, etc).
The mixture will seem dry. Shape truffles into bite size balls and roll in desired coating (chopped almonds, coconut, cocoa, chocolate sprinkles, powdered sugar, etc.).
